Papaya Kebabs


  • 1 kg. Raw papaya
  • 1-cup Bengal gram dal (channa dal)
  • 2 tbsp. gram flour (besan)
  • 3 tbsp. fresh coriander finely chopped
  • 1 tbsp mint leaves finely chopped
  • 5 green chillies finely chopped
  • 2 tsp lemon juice & 1 tsp. ginger grated
  • 2 onions finely chopped
  • 3 cups water
  • 1-cup fine breadcrumbs
  • 1 tsp roasted cumin powder
  • Salt & pepper to taste


  1. Peel, core and slice papaya.
  2. Wash and put in a deep vessel.
  3. Add washed dal, add water, salt and cook covered.
  4. Take off the fire when the papaya is soft, and all water has been absorbed.
  5. Cool mixture, grind to a coarse paste.
  6. Roast gram flour slightly in a dry pan, add to paste.
  7. Add chopped onion, chillies, coriander, mint, ginger, lemon juice, cumin powder, pepper and salt if required.
  8. Make small patty shaped kebabs.
  9. Roll in breadcrumbs, roast or grill in a non-stick pan.
  10. Serve hot with green chutney.
