Protein Mix
Ingredients for Protein Mix
- 3 cups white oats
- ½ cup oat or wheat bran
- ½ cup french beans fine chopped and blanched
- ½ cup mixed peppers red, yellow, green(optional)
- 1 medium onion fine chopped
- 2 Green Chillies deseeded and sliced
- 1 tbsp almonds shredded
- 1 tsp Ginger fine chopped
- 2 stems curry Leaves
- ½ tsp mustard & cumin seeds each
- 1 tbsp olive oil
- 2 tsp lemon juice (not in dinners)
- Salt & pepper to taste
- Cilantro or fresh coriander leaves for garnish
Method
- Roast white oats and bran until light brown and keep it aside.
- Heat oil in a non-stick pan; add mustard seeds, cumin seeds and channa dal.
- Once they start spluttering, add ginger, green chillies and curry leaves.
- Stir and then add the onions.
- Once onions are translucent, add capsicums, beans and potatoes.
- Cover and let cook for 4-5 minutes on medium heat.
- Add the almonds to the above mixture.
- Season with salt & pepper, finally add the roasted white oats & bran and combine.
- If the oats start sticking to the pan just drizzle a little olive oil. (Add some water if required).
- At last, add lemon juice and mix well.
- Garnish with cilantro and serve hot.
