Quinoa Spinach Pancakes

Quinoa flour is high in fibre and protein and hence suitable for athletes and its high fibre content also makes it a suitable addition to the diabetic diet. These Quinoa Spinach Pancakes are also rich in iron.

Calories(Per Serving): 40 kCal

Ingredients

  • Quinoa flour, 1 cup
  • Grated onion, 1/2 cup
  • Chopped spinach, 1/2 cup
  • Grated potatoes
  • Salt to taste
  • Oil for greasing, 1/2 Tsp

Method

  1. Combine all ingredients along with ¾ cup of water in a deep bowl and mix well.
  2. Heat a non-stick mini uttapam pan and grease with ¼ tsp of oil. Pour 1 tbsp of the batter into each uttapam mould, spread it evenly and cook on a medium flame till they turn golden brown in colour from both the sides.
  3. Repeat step 2 to make 7 more mini pancakes.
