Vegetable Pasta Recipe

It is high in B vitamins and minerals, such as copper, selenium, magnesium, and manganese which are important for healthy nervous systems and energy metabolism.

Ingredient: 

  1. Wheat Pasta 200 gram
  2. French Beans 2 Cup
  3. Capsicum 3 medium
  4. Fresh Basil 3 Tablespoon
  5. Spring Onions 1 Cup
  6. Extra Virgin Olive Oil 2 Teaspoon
  7. Fresh Thyme 1 Teaspoon
  8. Lime Juice 1 Teaspoon
  9. Salt 1/4 Teaspoon
  10. Ground Black Pepper 1/4 Teaspoon

Method: 

  1. Cook pasta according to pkg directions.
  2. Reserve 1/4-cup pasta water.
  3. Drain pasta and rinse with cold water.
  4. In a large bowl, combine pasta, reserved pasta water, and tomatoes, basil, thyme, beans, spring onions, salt, and pepper, mix well.
  5. Add lime juice at the last moment, toss well and serve chilled.
