Veggie Pita Pocket
Ingredients for Veggie Pita Pocket
- 1 Pita Bread
- 1 cup hummus (Method given below)
- 6-8 slices of peeled cucumber
- 4-6 slices of tomato
- 1 lettuce leaf (spinach would be great too!)
- 1/4 cup feta cheese
Method
For Hummus
Boil 1 cup chickpeas, add them into the blender along with 4-5 garlic cloves, roasted sesame seeds, 1 tsp lemon juice, 1 tsp cumin powder, 1 tsp olive oil, salt and black pepper.
Main Recipe
- Chop lettuce into bite size pieces.
- Slice pita in half and gently open to create a pocket.
- Spread hummus over inside of pita halves.
- Fill with cucumber, tomato, cheese, and lettuce to taste.
